Low Calorie Meals

We're big into italian, mexican, and anything we can grill.

You could make fajitas or tacos without the shell (replace with lettuce leaf). Italian is hard because it usually involves some sort of pasta. Grilling is an excellent idea and very healthy. Get some chicken breasts or pork and marinade it for a few hours or overnight.
 
Any spice reccomendations? I'm up to try new things and usually cook some what bland.

for Italian, I'll put in oregano, garlic/garlic powder, pepper, pesto, parsley. Rosemary if it involves chicken. For Mexican - chipotle powder, cumin, oregano, cilantro, chili powder. Even just for sauteeing green veggies - they all get some combo of garlic, pepper, and oregano.

Experiment a bit - if I'm not sure what something needs, I'll put a little in a bowl, dump whatever spice seems good and then taste it. If I like it, it gets added. If not, try again!
 
I'll agree with this for the most part. You should still live a little too. Don't starve yourself but don't eat McDonald's three times a day. You can eat a large amount of the right foods and be better off than eating small portions of bad things.

I have a friend who is in absolutely great shape and he'll eat 8000 (!!!) calories some days but it is all really healthy food, high in protein.

I don't even think I could eat 8000 unhealthy calories (meaning less food, more calories) without vomiting from being so full. Is your friend Michael Phelps?
 
Fat free milk. If you want me to i can make a huge list later.
 
Oven roasted chicken is tough to beat and pretty simple. Just pick up a 3-4 pound chicken from the HyVee/Fareway/Dahls meat dept., pat dry, rub the outside with a (very) little bit of butter and season with salt/pepper, cut up some carrots/onions/celery/rosemary and stuff into cavity, roast in shallow roasting pan at 450 for about an hour. Steam some veggies and serve with a little rice pilaf.

Another healthy meal that's simple would be fish tacos... just broil some tilapia, halibut, cod, cut it up and serve with some chopped salad or coleslaw mix in small corn tortillas. I have a great cilantro/lime sauce that I make for these if you're interested.

Also, if you're looking to lose weight I'd suggest trying to do the gluten free thing. Can be a pain, but it works.

What's your height and weight determines how much you eat also. 1400 is way too low

that could also be too low for you which will also hinder your progress. Have you ever looked into TDEE calculations?

I don't think I believe in this.....according to it, I take in less than half the calories I'm supposed to daily.....I should be skeletal at this point.

He eats like 5 whole meals throughout the day on top of a mass gainer protein shake that is 1500 calories on its own.
