I didn't include this but we'll make carnitas out of pork shoulder and freeze the leftovers. Every so often I swap tacos for carnitas and just get out some frozen carnita meat.
I always thought carnitas were tacos made with pulled pork

I would love to see someone make swedish meatballs in 30 minutes. Of course when I make them I do like 3-6 pounds at a time.
 
A good/easy one is to throw a pork shoulder into a slow cooker and let it go all day. By the time you get home (8-9 hours) you'll have pulled pork. I'll put a dry rub on and let it sit for 30 minutes, thinly slice a yellow onion, layer onion on bottom of slow cooker, put pork shoulder in, few cloves of minced garlic, pour in 1 cup of chicken stock, cover and set to low. This also leaves plenty of leftovers for later in the week.

I'm a a big fan of this but we usually mix in some BBQ sauce and go the BBQ pork route. Pretty tasty and a solid leftover.
 
Stir fry. Just cut a uncooked pork chop or chicken breast into strips . pan fry with vegetables of your choice . season with soy, teriyaki, or whatever you like. Serve over minute rice. Boom .

Also, I bought a vaccum sealer last year and wished I'd done it 15 years age. I now buy bigger roasts, or make larger batches of carnitas or pulled pork. Vacuum pack one meals worth and throw it in the freezer. If you forget to thaw it out throw unopened bag in pot of water and bring to boil on stove. This also prevent you from having to eat same thing 2-3 days in a row.

One my wife makes that is super easy and tasty is chicken taco fettuccine. This is essentially what her recipe is (though make sure you have enough sauce) - it's arguably better tasting as leftovers too somehow.
 
Can't go wrong with these little beauties. We even bake them in the oven during the winter. PS if you don't know what thee are get your *ss to Fareway and buy some today. Oh, and you're welcome!

That does sound good and we need to do more chicken. I always end up avoiding chicken on weeknights because I feel like I haven't gotten practiced at cooking it very well to do it with only half a mind on it. We should really try this one, never had couscous either. Does it have kind of a rice or pasta flavor? And you keep it plain or season it however you want?
I've been in a rut of chicken breasts in the crock pot with salt, pepper, and bavarian seasoning. Just cook it Sunday for the week and serve with veggies. It's easy, and if we eat at different times whomever can just warm it up.

I have added tacos, goulash, spaghetti.

Chili

Pot Roast

Grilled cheese and tomato soup. Even just Campbell's is pretty good when dipping gooey cheese sandwich in it.

Tacos and/or Taco salad

Walking Tacos - my kids love this even as an evening meal.

Kings Hawaiian rolls with frozen breaded chicken fingers and cheese slices make great little sandwiches. Kids doctor them up however they want.

Frozen breaded shrimp with frozen french fries and salad or a canned (or fresh) vegetable. Make that fryer work for an evening. Good for us Catholics on a Lenten Friday.

Chili and Soups can be made on the weekend and reheated during the week. Can also prepare pot roast and chili Sunday night and fire it up Monday morning for the Monday evening meal. In my opinion left over chili that is reheated just keeps getting better as the flavors have an opportunity to marinate and blend. Move your frozen pizza to another night so you can use the Sunday evening prep for Monday night's meal.


Breaded shrimp is a good one I hadn't thought of! Chicken tortilla soup is one of my favorites that we do on Sundays. Love eating that all week.

Couscous is more like a pasta flavor than rice, to me. It's unique, and kind of sticks to you more than just rice or pasta, maybe a little more protein. A bit dry maybe, so when you put the chicken and onions on it, pour off the juice - it will absorb all the liquid and the seasoning from the chicken. Actually, we will mix it up sometimes and use jasmine rice instead, just for the change of pace.

Chicken is easy to cook, just flip it every so often and once it is browning it's probably done inside, but cut it to see if you want. Or use a meat thermometer if you are really worried.

Take a bag of chicken tenderloins. Dump in crock pot. Dump can of cream of mushroom soup over top. Empty bag of store bought stuffing in a bowl add some water to make it a little moist. Dump on top of soup. Cook for 4-5 hours, but we've done 8 before. Kind of like a quick Thanksgiving dinner.
 
BBQ chicken in the crock pot. Drop a few chicken breasts in the crock pot in the morning with some chicken stock (water works too). Let it cook for 8 or so hours during the day. When you get home, shred and add BBQ sauce of your choice. We usually have those broccoli bags from Green Giant that you poke holes in and nuke to steam them. Put some meat on a bun and you're golden. If you want to get fancy you could bake some fries or something :)

Try cooking in dr pepper or cherry coke instead of broth ... takes it up a notch
 
A couple of quick (and foolproof) chicken recipes:

Crockpot Chicken - Wash & pat dry a whole chicken (if you can find roasters, they're better). Place breast up in crockpot, dot with butter, apply poultry seasoning liberally and salt/pepper to taste. Start the crockpot in the morning & let it cook all day. It will make its own juices. I serve it with rice.

Chicken & Shrimp Curry - 1 can cream of chicken soup, one lg. can shrimp (drained), one lg. can chunk chicken (drained), 1 tsp curry powder. Mix in saucepan, heat through. If you're doubling for a larger batch (it makes a great leftover!), I substitute a can of cream of shrimp for one of the chicken soups. Serve over rice.
