Weeknight Meal Ideas

Crock pot Italian Beef Sandwiches. Especially good if you toast the hoagie rolls in the oven using the broiler right before you add the meat (butter one side and provolone cheese on the other).

Take a bag of chicken tenderloins. Dump in crock pot. Dump can of cream of mushroom soup over top. Empty bag of store bought stuffing in a bowl add some water to make it a little moist. Dump on top of soup. Cook for 4-5 hours, but we've done 8 before. Kind of like a quick Thanksgiving dinner.
Your recipe sounds great but I mostly wanted to say that I LOVE your screen name. :D
 
Do you have a Trader Joe's nearby? We love doing their frozen meals that take about 7-10 minutes on a pan on the stove (from frozen). We add a protein of choice and enjoy. Some of our favorites include:
  • Chimichurri rice
  • Creamy asparagus risotto
  • Gorgonzola gnocchi
  • Cauliflower stir-fry

The only thing I can add that hasn't already pretty much been said already.

Ham Slice. Fairly cheap and already actually cooked.

Open the package and cut into serving size pieces. (You can leave them whole but they tend to curl up and difficult to cook evenly.)

Put pieces in a large skillet. Med/High

There's usually a lot of liquid at first so it cooks slowly. If you like it just warm it's fine, but I like a bit of color so you really have to pay a bit of attention when the liquid is gone because that's when you get the crisping. Turn over and brown a bit on both sides.

You can do any kind of potato with them even the boxed au gratin or cheesey potato.

Add a green vegetable or a salad to the menu and you're golden.

I'd be shocked if we didn't have one in town but I've never been. I've always been kind of leery of premade frozen stuff but some of that sounds pretty good.
