Luke is currently the last Jedi, there are no others. Doesn't mean he can't train more.
At the start of the movie I think it'll refer to Luke. Everything they've said has led to take. Whether he trains Rey or not could add another. Remember that Luke wasn't a Jedi Knight until the end of Empire.
IMO I wonder if they have something up their sleeve for his one. Maybe Luke is reluctant to train Rey. Seems he failed at training Jedi after ROTJ.

And the Neverending Story did, in fact, have an end. ...and a sequel... which also had an ending...
Probably in the end, the empire will knock off all Jedis and squash the resistance. You will sit and realize you spent 20+ hours of movie watching to see all hope is lost in the future.
I was going to point out it was a trilogy but maybe just thinking of the first two movies is better than acknowledging the 3rd
