Here's a weird thought: Our local hospice has a kitchenette for use of the residence's family/friends. Maybe donate some to them for those whos holidays aren't as happy as yours. For a couple bucks more add a loaf of bread and a stick of butter.
 
My mom makes a ham and cheese bread pudding that's really good. I look forward to that more than the ham.

Add chopped to a baked omelette. This stuff is SO good, you can even eat it cold (like tapas, in Spain)

 
Bean soup... (good a few days when you don't have to go anywhere...if you catch my drift...)

 
One of our go-to's is dicing up the leftover ham and making ham tetrazzini, peas optional.
 
Freezer?
Slice it up and put it in ziplock bags. Make ham and cheese sandwiches for a light meal down the road
A trick to prevent freezer burn, is to wrap it tightly with cling wrap before putting in freezer bag. Works almost as good as vacumn packaging.
