Fresh Turkey

I've spatchcocked Frozen Turkey and worked great. Brining makes a big difference though.
I dry brined and let it sit overnight in the fridge. The fresh turkey cost more but Fareway did the spatchcocking for me for free.

I think so? Good question, I've just gotten fresh every year for many years now, mostly to avoid having to defrost for days. Might find out for sure this year.

Try a local meat locker, and see if you can order one to pick up before Christmas.

There's a butcher shop in downtown Waukee (Old Station Craft Meats) that was advertising them around Thanksgiving, not sure if they still have them or not, but might be worth a shot.

This may be a bit of a stretch but there was a stand that sold them that'd I'd see at the Des Moines Winter Farmer's Market.
