    I'm dying to get my barbecue stuff set up again. I haven't touched it since I moved, because doing setting everything up in the winter would suck and I've had issues with mice the past couple years, so I'm waiting until spring when I get a couple garage cabinets instead of using open shelves.

    Thank you. It took a few years of tinkering to perfect everything, but I think I've finally done it. I also used a garlic and herb injection mix, which helped bring some extra flavor on the inside of the meat.

    Christmas dinner at my parents' place. Smoked it at 250 for about 2.5 hours, let it rest for 30 minutes and then popped it in a 500-degree oven for about 8 minutes to get a good crust. Made some horseradish sauce, and some gravy from the drippings, too.

Makes it easier to get meat that cooks at an even rate, and it's still a big cut of meat, so it's not hard to feed a crowd with a couple breasts.
