Smoking Meat Questions and Discussion

I haven’t tried it, but maybe some bbq meatballs.

Welp, I hate bringing untested foods to stuff like this but I ended up doing some sausage balls.

1lb Pork Sausage
2C Bisquick
1C Cheddar
A brick of cream cheese
Meat Church Holy Cow Rub

The plan is to smoke tonight and then put them in a crock pot tomorrow with some wet paper towels to keep them moist.

Anyone have some tips on reheating frozen pork butt? Plan on putting it in crock pot for game watch at a buddys.
 
Already cooked and shredded, correct?

I vacuum pack it and then when it needs reheated, I put the frozen pack in water and boil it. Otherwise just a crock pot and some broth.
How long does it take to heat up unfrozen pulled pork. Smoked 2 yesterday for the tailgate.

I always put a pan with some water/apple juice under my pork butts to save the drippings. I skim the fat off and then pour that liquid gold into the crockpot with the thawed out puled pork. Turns out amazing.

Dude, each person is going to eat more than a pound of meat?

That was raw weight and not the cooked weight. A couple of places I was using for guide was to plan for about 12 pulled pork sandwich per an 8 pound butte. Then I added a couple more buttes just in case people where really hungry. The chicken was used to make chicken salad. Full disclosure, this my first time catering and I could be way off base with my quantities.
 
Picked up a couple flank steaks at Walmart yesterday. It was listed for $12.33 lb. Got a 2.5 lb one for $13.50. The other one was 2.3 lbs for $12.70. So list price for both would have been around $58. I should have taken the other two they had on sale. Crazy savings!!

Bought some fuses to see if that was the issue (hopefully that’s all it is) but haven’t tried switching them out yet. If that fails, I’ll buy a new motherboard thing for it which is like $40 off Amazon. If THAT fails, screw it. Daddy’s getting a new smoker for FB season.
Update: New controller fixed the problem! Haven’t used the smoker in 6 weeks. Firing this b*tch up now for wings for the game. Daddy’s back in business boys!!!!!

Kind of a rule of thumb from the meat cutting days…….

Bone in products you should plan for a pound per person uncooked (about a half pound for boneless). You should be good to go room to spare.
 
Bought a brisket from Sam's today. Going to try to smoke it this week and then sous vide for 12 hours or so. Happy to see brisket prices lower.
