UNI Tailgating Food

What's everyone planning for the UNI Game? I'm starting with bacon wrapped poblano peppers filled with sweet italian sausage and cheddar cheese. May also make a version on Al Pastor tacos. Take some vac sealed pulled pork and marinate it then put it in the crock pot. We have a lot of red bell peppers so will put those on the blackstone with some onions and saute them for the tacos.

I'm not going to the game (I have a 3 week old newborn) but I'm gonna be smoking a pork butt and queso. Not sure if I want to have it done for kick off, or for supper with the night games.

We drop the RV in the village around 11-12 on Friday and then go indulge at Welch Ave for lunch.
Friday night we will have BBQ pulled park sandwiches.
Saturday we keep it easy for the first tailgate weekend and are doing brats, sausages and hot dogs for lunch (with whatever sides our guests bring) then left over pulled pork, brats, sausages and dogs for post game festivities.

And of course drinks.....lots of drinks!

We usually get more "crafty" with the menu as the season progresses. I want to enjoy the first weekend and not spend my whole time cooking.
 
Installed a sink in the back of my converted short bus and realized I can have cold beer come out of the faucet!
