Thanks so much to @Gonzo for this thread idea! I love the spirit of it - here are his own words:

Are there any condiments, sauces, seasonings, spices, whatever, etc., that you always turn to in your cooking? As in, you'd literally freak out if you opened the cabinet/pantry/fridge and discovered you were out when cooking a meal?

I can’t cook, but Janny will often have me taste whatever he is making and ask me if it needs something. My answer is always “garlic salt.”
 
I also use a lot of garlic salt, but also rely heavily on chili powder, sriracha, Frank’s hot sauce, and Italian seasoning blend. For a condiment, also like the honey sriracha ketchup. I use that as my ham loaf topping now, instead of my usual old meatloaf brown sugar, ketchup, mustard combo.

My wife can attest, I use this stuff on nearly everything. I use it as a condiment, add it to recipes, put it in soups, use it on takeout, etc. We always have at least two spare bottles in the pantry, to go along with the open bottle in the fridge.

It's mostly just jalapenos and tomatillos and garlic
 
My wife buys tomato paste in toothpaste type package. We keep it in the fridge. It's revolutionized a lot of our soups, sauces, meatloaf's.

Whether it's used a little or a lot, garlic powder/salt always needs to be heavily in stock in my house.

LOL, I've been called the condiment king before because my fridge is full of them. No one in particular really, I guess ranch is pretty versatile with fried foods and other things. I have various brands and styles of BBQ sauce depending on what I am putting it on or hot spicy I want it.

This is how I buy it too. Game changer.
 
using leftover oil to make a pan sauce is a game changer and it only adds another minute or so to your cooking routine

leftover oil+lemon juice drizzled over tilapia is money

I typically have 10-15 different kinds of hot sauce on hand, usually gets added to whatever I'm eating. Also a big Lawry's guy, have to have it on any beef/pork I make.
