I know right...is it to much to ask for a nice tater tot casserole once in awhile?

I've got the best/easiest Hamburger/green bean/potatoe casserole!

Brown hamburger in skillet.
Dump in jar of Prego spaghetti sauce.
Dump in can of green beans.
Let it simmer/heat for a bit.

Put mashed potatoes on top (either spread or individual piles) and put in the oven on 320 for 15 - 20 minutes.

So freaking good!

We do the same only use tomato soup instead of spaghetti sauce and put cheeze on the top of the potatoes before baking. Good stuff.

Thai casserole -
Parboil 1 1/2 cups of basmati rice and set aside. Brown 1 lb ground pork in a cast iron Dutch oven.
Add 2 T sambal olek to the pork and stir in for 1-2 minutes. Add one finely chopped small onion, one can of coconut milk, 2 chopped carrots, 8 oz. chopped sugar snap peas, 8 oz of mushrooms, (edit: 2 T brown sugar and one T asian fish sauce) one chopped red bell pepper, and the rice. Stir all together and cook in oven for 30 minutes at 350. Serve with crushed peanuts, cilantro and a dash of hot sauce.
