Hosting at my house a small group of people for the Iowa game. One thing I hate about about hosting is food prep/cooking while not missing any of the game. My goal would be everything is ready and warm for people to eat whenever. I will admit I am a terrible host.

What are some low maintenance food options (entree and sides) while hosting? Any good crockpot meals?

Are you talking hosting at home or tailgating?
 
Some pulled pork in a slow cooker, beans, potato salad, Jell-O shots are a few self serve things that can just sit there and be fine.
 
Mini pigs in a blanket are always a hit. A bit of prep but easy to cook.

I used to get **** for bringing them to gatherings but oh, look, they're gone in like 10 minutes.
 
You could smoke a big batch of wings. Those only take 3-4 hours from prep to finish, get going on them late morning then throw them in a slow cooker to keep warm and you won't miss kickoff.

Little smokies in a slow cooker is an easy one that never disappoints. You could also do a slow cooker chili, I've got some solid recipes I can forward if interested.
 
Beef queso dip
Buffalo chicken dip
Smothered meatballs (BBQ, garlic, etc pre made from Martin Brothers or something similar)
Little smokies
Pulled pork sandwiches

Nothing wrong with ordering pizza too IMO and doing a few simple sides to go with it.
 
I'm gonna get some wings done on the smoker about 10 mins before kick off. Maybe add some Buffalo turds on the upper rack.
 
If you have a big grill a big ol' pile of brats, burgers, and hot dogs can't go wrong.

I think most guests at tailgates just want a simple process for eating and beers.
 
Chopped up watermelon and muskmelon, bacon wrapped little smokies. Pre cook some brats and put them in a warmer with some sauerkraut with them. Potato salad, baked beans. Salsa and chips.

I’d be too nervous to eat.
 
These are easy to make and are great tailgating food.

 
Make a batch of Dutch’s baked beans!! I’m making a double batch and taking them to our IC tailgate this weekend.
 
If your at home, you could just make some ground beef, put it in a slow cooker on the warm setting, and make a nacho bar.

Also, you could do things like roast beef, meatballs, etc. where you can put them in the slow cooker to keep warm, and do sandwiches. Then you can do things like pasta salad, chips, etc. that can be left on the counter as sides.
 
Taco bar is a great, easy throw together.

I was learning this direction as well but them walking taco and you will potentially have less dishes to clean or throw away. The meat could be put in a large crockpot for better accessibility. Then have dips like queso, fav, and salsa.

Making a massive amount of salsa is easy and cheaper if you have a blender or food processor:
1 - 28 oz whole tomatoes
1/3 c. red onion
1/4 c. cilantro chopped up
half a lime squeezed for juice
1 T. cumin
Pinch of salt and garlic powder for desired taste
Pulse all the ingredients together in blender until desired constituency.

Don’t forget baked goods like cookies or scotcharoos.

Where are you guys parking? I'm trying to figure that puzzle out.
I’ll be just south of the parking ramp. Not sure quite where yet as our friends are bringing an RV in. I’m just hoping cell phone service is better than JTS.
