Just had batch on Saturday. Smoked some burgers the day before and then chopped them up and added a big can of chili beans, two small cans of pork and beans, and a small can of black beans. Add tomato juice, a jar of homemade salsa along with some chopped up red, yellow and green peppers and spices to add some kick. I also added a some sweet pickled hot peppers.
Chili must have beans it it. I'm not a Texas chili guy.
So this monstrosity of chili is what makes people mad about mid westerners calling it chili. No imagination, pork and beans?, adding green peppers for some "kick" etc.

A good midwestern chili is great and I love eating and making them especially on a cold night or a football tailgate. All the different veggies and beans and meats come together for a nice spicy stew. Call if chili, who cares.
A meat only chili is dope and if you thicken it up a bit, you eat it with tortillas and veggies like a classic chili con carne. Or maybe go out to the northeast and make it coney style and slap it on a dog.
Both have their uses, both are amazing and I think the whole "no beans" thing is like people getting mad about calling tex-mex, mexican food.

I generally use dark red and light red kidney beans with chili beans. I usually go 50/50 with ground beef and spicy ground sausage. If the wife is up in arms I will go 50/50 with ground turkey and the sausage so she can think it is healthy for her. I brown the meat with chopped white onion. Add in stewed and peeled tomatoes with jalapeno, serrano and habanero or anaheim peppers. Without beans you’ve basically got tomato sauce with ground Tenorman. Pass.
