I don't think people (including experts) understand food that well at all. There is all this emphasis on what NOT to eat when in reality, food is good for you. Food, in and of itself does not make a person fat.
I could talk about this for hours as I am a major "foodie". I love to eat, cook most of my food from scratch and rate my vacations on based on where the best meals have been eaten. I cook with a lot of butter, cream and bacon as I have boys to feed and since they are in sports it can be very hard to get enough calories in them.
I have several friends that cook like I do. Real meals. Real sit down meals with bread and meat and vegetables. We are all pushing 50 and we are all thin. Of my friends that diet, eat salads and think nachos are dinner, not so much.
Unfortunately, once women gain weight, it can be very difficult to lose. Like someone said, we don't have the muscle mass or the metabolism. My neighbor was clinically obese but still exercised enough that she competed in triathalons. She only lost weight after she had gastric bypass surgery. She said it was very eye opening to realize just how much food she had been consuming before, something she didn't understand until she literally could not eat like she used to.
On a side note, I think more men would "diet" like women do if they were not in denial about how much extra weight they are really carrying.
