    My sister is a physical therapist; she actually says that chiropractors have their place.....that place just begins and ends with luxations/subluxations. Anything other than that, use a physical therapist that can actually fix and prevent.

    I put the meat on a big baking sheet, salt both sides, covered tightly with aluminum foil, and put it in the fridge. I'm with you, I'd be worried about it drying out if uncovered for that long.

    I dry brine with kosher salt 18-24 hours; any rub goes on while the smoker heats up, with a little water to help it stick. Do the same thing for pork as well (ribs and butts).

    Haven't had it, but I've also heard great things from multiple people about the Sunday brunch at Cornbred. My choice: The Grove Cafe in Ames. Nothing fancy, but can't be beat when it comes to the standards.
