I have a few mini helmets but can't seem to find some others, like the white with black logo, black with colored logo, etc. Is there a site that makes the realistic-looking ones on demand or is checking amazon periodically my best bet?

Not crazy for a custom helmet. I have made and sold a few mini helmets for the same price. Anything less and not really worth my time. People with a more streamlined process can probably go lower. This guy has plenty listed for $70+ as well.

you could reach out to the guy that made this video. I think he makes the helmets himself but he could likely make whatever you want. these are the tiny helmets but he likely could do this with the mini helmets.

If you want good looking, high quality speed helmets - this is your guy! I've gotten a couple from him, and they're great. I bet he could potentially customize as well if you want, I believe he makes them to order.

I noticed some of them are a really generic round helmet in some of them are the more modern speed helmets. I think the ones that are a full replica look better but they also appear to be more expensive

I like Speed helmets better, but seems like most ISU alternative helmets are from Schutt.
